5.30.26 Meal Plan (+Grocery List!)

Memorial Day is behind us and summer is officially here. This week's plan leans into the season fully. We're grilling on Monday with a chicken salad that makes corn actually exciting, going viral on Tuesday with the street corn beef bowl that just landed on the site, and keeping the rest of the week light and fast without losing any flavor.

If you've been seeing that beef bowl all over your feed, this is your week. It's better than what you've been seeing. The rest fills in around it: smashed chicken Caesar tacos Wednesday for the midweek energy crash, pork lettuce wraps Thursday because warm evenings call for something crisp, and baked pesto chicken Friday because four ingredients is the only kind of recipe Friday deserves.

And the bonus: Lemon Angel Food Cake with Strawberry Compote. Strawberries are at peak right now. This is what to do with them.

Monday | Grilled Chicken Salad with Corn, Avocado, and Feta

Meal Prep Tips:

  • Grilled Chicken Salad: Marinate the chicken and make the dressing the night before. Keep components separate, dress right before serving.
  • Street Corn Beef Bowl: Roast sweet potatoes and cook the beef Monday night. Make the street corn topping and refrigerate. Tuesday is just reheat and assemble.
  • Chicken Caesar Smashed Tacos: No prep needed. Season the chicken Tuesday night if you want a head start.
  • Sweet and Spicy Pork Lettuce Wraps: Cook the pork filling Wednesday night, store separate from lettuce. Reheat and assemble Thursday.
  • Baked Pesto Chicken: Assemble in the baking dish Thursday night, cover, and refrigerate. Let it sit 15 minutes before baking Friday.

Recipe Customizations:

Gluten-free: This is one of the most GF-friendly weeks in a while. The grilled chicken salad, street corn beef bowl, pork lettuce wraps, and baked pesto chicken are all naturally gluten-free. For the Caesar smashed tacos, use Siete grain-free tortillas and skip or swap the croutons.

Dairy-free: The pork lettuce wraps are naturally DF. For the rest: skip the feta in the grilled salad, use DF hot honey in the beef bowl, use Primal Kitchen Caesar dressing for the tacos, and use DF pesto plus skip the mozzarella in the pesto chicken. The Lemon Angel Food Cake is naturally dairy-free.

A few extras if you want them:

Lunch: The grilled chicken salad packs well for Tuesday lunch. Keep dressing on the side and dress fresh. The pork lettuce wrap filling also reheats over rice for a two-minute lunch.

Breakfast: High-Protein Cottage Cheese Bagels. Make a batch Sunday and you're set for the week. High-protein, and they toast like a dream.
