This week is a good one. Two taco nights. One crispy chicken caesar worth staying in for. A sheet pan Korean BBQ meatball dinner. And the dump-and-bake coconut curry noodles that do all the work in your oven on Friday.

Here's Your Plan:

Monday | Crispy Chicken Caesar Salad (25 min | GF option)

Pan-fried Italian breadcrumb chicken cutlets over romaine with Greek yogurt caesar dressing. 50 grams of protein per serving. The crunch alone is worth it.

Tuesday | Korean BBQ Meatballs with Roasted Vegetables (35 min | GF + DF)

Ground beef meatballs, sweet potatoes, brussels sprouts, all on one sheet pan with a sticky gochujang glaze. One pan, minimal cleanup.

Wednesday | Blackened Shrimp Tacos (20 min | GF)

Charred, smoky shrimp in corn tortillas with lime slaw and a chipotle crema made with Greek yogurt and adobo sauce. Twenty minutes. Tastes like a really good taco spot.

Thursday | Pork Tenderloin Tacos with Corn Salsa (30 min | GF + DF)

Crispy marinated pork strips in charred corn tortillas with street corn avocado salsa and cashew crema. Marinate the pork Tuesday or Wednesday night. Thursday dinner takes 10 minutes.

Friday | Chicken Curry Noodles (Dump & Bake) (35 min | DF | GF with rice noodles)

Everything into one baking dish: chicken, vegetables, coconut milk, red curry paste. Cover and bake. Add noodles halfway through. The sauce thickens in the oven and coats every noodle. No stirring, one dish, done.
