This week's dinner plan is five recipes that each feel completely different from each other, and not a single one takes more than 40 minutes.

Here's What's on the Menu

Monday | Bang Bang Chicken Skewers (30 min | GF + DF)

That sweet-spicy bang bang sauce on grilled or air-fried chicken skewers. Marinate tonight, dinner takes 20 minutes Monday.

Tuesday | Korean Beef Bowls (20 min | DF | GF with tamari)

Ground beef, gochujang Korean sauce, quick-pickled veggies, over rice. Fastest dinner on the plan.

Wednesday | Shrimp Pad Thai (30 min | GF + DF)

One wok, one pound of shrimp, wide rice noodles, homemade peanut sauce. Tastes like takeout, done in 30 minutes.

Thursday | Viral Ground Chicken Doner Kebab (40 min)

Ground chicken rolled in parchment, baked, broiled, served in pita with hummus, tzatziki, and feta. Or over rice for GF. The one that went viral for a reason.

Friday | High Protein Cottage Cheese Pizza Crust (30 min | Meatless | 29g protein)

Four-ingredient crust. Blend, bake, top, bake again. 29 grams of protein per two slices. Kids do pepperoni, adults do pesto and prosciutto. Everyone wins.

Bonus | Raspberry Crumb Cake(50 min | 8x8 pan)

Fresh raspberries, jam, cinnamon streusel. Make it this weekend. GF: 1:1 GF flour.

This Weekend's Prep

Do these five things Sunday and the week gets a lot easier:

  • [ ] Marinate bang bang chicken tonight (5 min, marinates overnight)
  • [ ] Cook a big pot of rice (covers Tuesday and Thursday)
  • [ ] Make the pad thai peanut sauce (5 min, keeps 5 days)
  • [ ] Mix the doner kebab spice blend (2 min)
  • [ ] Bake the raspberry crumb cake (better the next day anyway)

GF This Week: Bang bang skewers (naturally), Korean beef bowls (tamari), shrimp pad thai (rice noodles), doner kebab (over rice), cottage cheese pizza (GF flour)
